SIMNEL CAKE

I wouldn’t call myself a traditionalist, but it’s no secret that I love to delve into heritage for culinary inspiration. When I first moved to France, I realised that not everyone approaches Easter with the same vigour that we do in South Africa. It’s a family holiday to us, and some of my best childhood memories involve egg hunts and homemade hot cross buns. Traditionally, a Simnel Cake is a fruit cake layered with marzipan and topped with a ring of boules that represent the twelve apostles… or Easter eggs, depending on the way you look at it. In this case, I’ve put my own spin on it by decorating the cake with monogrammed, gold-dusted macadamia marzipan discs. The same macadamia marzipan was used to top the cake, which gives it a deliciously tropical twist for the ultimate luxury indulgence!
